2016 Holiday Recipe – Appalachian Trail Cookies

When you can’t decide between an oatmeal raisin or a chocolate chip cookie, just avoid the fork in the road and choose this chewy, chunky cookie. It’s even better with milk.

Makes about 2 dozen

Ingredients

2 sticks softened butter (1 cup)

1 cup white sugar

1 cup light brown sugar

2 eggs

1 teaspoon vanilla

2 cups flour

2 teaspoons baking soda

1 teaspoon salt

2 teaspoons cinnamon

3 cups Old Fashioned Oats

8 oz. toffee bits

6 oz. semi-sweet or dark chocolate chips

2 cups broken walnuts

¾ cup raisins
Preparation

Preheat oven to 375°.

Cream butter and sugars, then add eggs and vanilla. Mix well. Combine flour, baking soda, salt, and cinnamon in separate bowl and then add to the butter mixture. Blend well.

Fold in oatmeal and remaining ingredients. Batter will be stiff. Place rounded tablespoons of dough onto lightly-greased cookie sheet and flatten slightly.

Bake for 12 – 15 minutes or until edges are starting to brown. Remove from oven & let rest for 4 minutes. Then remove from sheet and place on wax paper to cool.
