This pesto is delicious on fish as well as on pasta. The pesto also is a great spread for bread or crackers.
(Serves four.)
Ingredients
4 swordfish steaks about 1/2″ thick
Salt and pepper
Pesto
1 bunch cilantro
1/2 cup macadamia nuts
Sea salt
Olive oil
Preparation
Preheat oven to 350 degrees. Lightly salt and pepper the swordfish steaks. Add 1 tsp oil to large cast iron pan and heat over medium/high heat. Place swordfish steaks in pan and cook for 2-3 minutes until lightly browned. Turn steaks and put pan in oven to complete cooking about 3-4 minutes more depending on thickness.
Meanwhile, put cilantro, macadamia nuts and pinch of sea salt in food processor and pulse until nuts are finely chopped. With machine running, add stream of olive oil until pesto is the proper consistency. Taste and correct seasoning.
Spread 1 tbs pesto on each of swordfish steaks and serve.
