2011 Holiday Recipe – Firefly Mango Salsa

This salsa is delicious with fish or pork chops.

(Serves four.)


1 ripe mango, peeled, seeded and cut into ¼” dice
1 lime, juiced
1 avocado cut into ½” dice
1 jalapeno minced
½ red pepper cut into ¼” squares
½ bunch cilantro chopped
2 scallions, white parts only sliced
Salt and pepper to taste


Mix all the ingredients gently. Let set 15 minutes to blend flavors.
